People always ask me how I manage to eat yummy and healthy food 90% of the time. (Okay, maybe it was more like 70% over the holidays. 😉

It’s not easy…unless you do this one thing:

Keep. Stuff. In. Your. Pantry.

I know, I know. It’s one of those things that sounds simple but is tough to do when you’re not sure where to start.

So I’m gonna make it easy for you.

In this week’s video post, I share a few foods you should always have in your kitchen to make healthy, tasty, and filling meal prep easy and stress-free.

And here’s one of my favorite – and slightly unorthodox – ways to use oatmeal (one of my pantry staples). Thanks to my friend Kristy for telling me about this yummy dish!

Savory Oatmeal with Egg + Parmesan

(Makes 2 servings.)

I’ve made this for both breakfast and dinner. It’s so quick and easy and sooooo satisfying! You can also sauté some greens in garlic and olive oil to serve as a side dish.

Ingredients:

  • 1 cup rolled oats
  • 2 eggs
  • 1/4-1/2 cup fresh parmesan cheese, grated
  • Extra virgin olive oil
  • Salt and ground pepper

Directions:

Cook oatmeal according to directions. A few minutes before oatmeal is done, cook the egg (poached or fried in a little olive oil works fine). Place oatmeal in two serving bowls. Drizzle a little olive oil on top of oatmeal and sprinkle with cheese. Put egg on top. Add salt and pepper and another drizzle of olive oil to taste. Dig in!
