Breakfast is a tricky one. You kinda know you should eat it, but you just can’t figure out how to squeeze it in some mornings, right?

If you managed to eat something today, yay for you!

If you didn’t, don’t beat yourself up. It happens. But do me a favor and jot down how you felt all morning. (Maybe you felt fine, but humor me and rate your energy level and your mood on a scale of 1-5.)

Apple Walnut Baked Oatmeal

Adapted from Snack Girl

One of my favorite grab and go breakfasts, especially for oatmeal lovers. Try different combinations of fruit and nuts for a little variety.

Dry ingredients:

  • 2 cups rolled oats
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp powdered ginger
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1/2 tsp cinnamon

Wet ingredients:

  • 2 cups chopped apples
  • 1/2 cup chopped walnuts
  • 1 cup almond milk (or other milk of choice)
  • 1 cup plain yogurt
  • 2 eggs
  • 1/4 cup maple syrup, honey, or coconut sugar

Directions:

Preheat oven to 350F. Lightly coat an 8 x 8 baking dish with oil (I like walnut oil). Mix dry ingredients in a large bowl. Add wet ingredients and mix until combined. Spread mix evenly in the baking dish. Cover with foil and bake for 20 minutes. Remove foil and bake for 25 – 30 minutes, or until edges and top begin to brown a little.

Cut into squares to eat right away or wrap individual squares in foil for later on-the-go breakfasts.

Makes 8 servings.

Ginger Energy Smoothie

Between the sweet fruit, spicy ginger, superfood greens, and protein-packed almond butter, this smoothie will keep your energy up for hours!

Ingredients:

  • 1 cup coconut water
  • 1 frozen banana
  • 6 – 7 frozen sweet cherries
  • 1 – 2 inch chunk of fresh ginger (add more if you love ginger like me!)
  • 1 large leaf of Swiss chard (substitute 1/2 c. of spinach if you like)
  • 1 tablespoon almond butter
  • 1/2 cup ice

Blend until smooth. Pour in your smoothie to-go cup, and off you go! Makes one large or two small smoothies.

Avocado Egg Sandwich

If you prefer a savory breakfast, try this super quick and satisfying breakfast sandwich.

Ingredients:

  • 1 egg, poached or fried with a little ghee or walnut oil
  • Avocado slices
  • 2 slices of multigrain or gluten-free bread, toasted
  • Hot pepper sauce (optional)
  • Sea salt and pepper to taste

Layer egg and avocado between bread, with a dash of pepper sauce if desired. Keep the sandwich whole and wrap on end in aluminum foal, leaving the other end out and ready to bite. (I’d rather you sit down to eat it, but on the go happens.) 🙂
