Looking for a sweet and healthy 4th of July treat? Grab these “red, white, & blue ingredients” on the way out to the beach house.

Happy 4th of July!

Ingredients:

1/2 lb. fresh organic strawberries, hulled and quartered
1/2 lb. fresh organic blueberries
Vanilla bean ice cream

For lemon syrup (from Kitchen Konfidence)

1 cup water
1/4 cup sugar
Zest of 1 lemon

Combine lemon syrup ingredients in a small saucepan and cook over medium heat, stirring until sugar is dissolved. Remove from heat and chill.

Rinse and prepare berries. Mix together in a large bowl. Drizzle with chilled lemon syrup. Cover and chill berry mixture for at least 1 hour. Serve berries with a scoop of vanilla bean ice cream and a sprig of mint leaves on top.

Makes 6 – 8 servings.
