Are you entertaining for the July 4th holiday? Check meal planning off your list – I’ve got you covered, with a beautiful, tasty, and satisfying meal in less than 30 minutes. This menu feeds four people (unless you’ve got really hungry guests, in which case you may want to double up!).

Grilled Salmon

Ingredients:

  • 4 salmon fillets, 5 – 6 ounces each (Get sockeye salmon if you can!)
  • 2 tablespoons extra virgin olive oil
  • sea salt and pepper to taste

Mix olive oil, salt, and pepper in a small bowl. Brush salmon fillets with olive oil mixture. Grill for about 3 minutes on each side and serve.

Mango Avocado Salad (Adapted from Clean)

Ingredients:

  • 2 ripe mangoes, chopped
  • 1 avocado, chopped
  • 1 tablespoon lime juice
  • 2 – 3 teaspoons extra virgin olive oil
  • 1 tablespoon cilantro leaves, coarsely chopped
  • 1 tablespoon sesame seeds

Toss together in a bowl and serve.

Steamed Green Beans with Lemon Juice

Ingredients:

  • 1 pound fresh green beans
  • lemon juice, sea salt, and pepper to taste

Place beans in 1 inch of boiling water (use a steaming basket if you like) and steam for about 2 – 3 minutes. (You want the beans to turn bright green. If they turn dark green, you’ve gone too far.) Drain and toss with lemon juice, sea salt, and pepper. Serve.

And for dessert…

Red, White, and Blue Berries

Ingredients:

  • 1/2 lb. fresh organic strawberries, hulled and quartered
  • 1/2 lb. fresh organic blueberries

Whipped cream:

  • 1 cup organic heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon agave nectar

To make whipped cream, whip cream in a large bowl until stiff peaks form. Add vanilla and agave and continue whipping until stiff peaks form again. Rinse berries. Place in individual serving bowls. Add a dollop of whipped cream. Serve. (Yum!)
