I’m constantly playing around with food, tweaking recipes, making up random dishes based on what’s available to me. It’s a creative process for me, and I love it.
The other day, I returned from an early evening run with my boyfriend – an outing that took longer than expected – to discover that a) it was really too late to eat a big/proper dinner, b) I was STARVING!, and c) my BF had nothing in his kitchen except a box of oatmeal, some peanut butter, a handful of dried cranberries, and some agave nectar (all of which, by the way, I’d put there at some point in the recent past).
A new dish was born: Peanut Butter and Jelly Oatmeal!
It’s not as bizarre as you might think. One of my favorite cookies is the PB&J cookie at Milk & Cookies Bakery in the West Village – peanut butter cookie with dried cranberries and chocolate chips. So this particular combination of ingredients made total sense to my taste buds. Just try it! And let me know what you think.
Lara’s PB&J Oatmeal
(Note: I’m guessing at proportions here since I haven’t yet tried to recreate the yumminess. Makes a single serving.)
- 1/2 c. rolled oats (stay away from quick oats if you can…they make for soupy PB&J…ick!)
- 1 c. water
- Pinch of sea salt
- 1 T. crunchy peanut butter
- 1 T. agave nectar
- 1/4 c. dried cranberries (probably slightly less)
Combine oats, water, and salt and cook as directed on package. Stir in the peanut butter, agave nectar, and cranberries. Yum!
